So, this is what you should do. You should roll these in cacao powder and refrigerate them for 30 minutes. It tastes like a cacao date truffle and it’s SO GOOD. These are perfect for a midday pick me up, a snack on the go, or the perfect sweet tooth fix.
Almond butter date balls:
1/3 c + 2 tbsp of cacao
3 tbsp of water
2 tbsp of melted coconut oil
1 c of almond flour
2 tbsp of creamy almond butter (or peanut butter)
A pinch of salt
What to do: Place the water, melted coconut oil, and almond butter in the blender. Then add the rest of the ingredients. Pulse till you get a date paste texture. The protein balls will be “a tad” bit sticky. You can add more flour if you’d like. But once you dip the protein ball in cocoa powder (my fav), hemp seeds, cacao nibs, or mixed nuts the protein ball won’t be sticky anymore. The coating will help it not to stick anymore. My favorite coating is cacao powder. It tastes like a date truffle. I’m sure you don’t have to use a coating if you don’t want to! The protein ball should become non sticky once you refrigerate it. I rolled the paste into a ball, and then used a spoon to transfer the ball into the bowl with the coating. Rolled it around and tadaaa.
