1/3 C + 2 TBSP of cauliflower rice
1/4 C of diced arugula or cilantro
1/2 TSP of pink salt (or any other seasoning)
1 TBSP of olive oil
What to do
Preheat the waffle iron. If you need to blend the cauliflower in the food processor, go ahead and do that now. Once you have cauliflower rice, mix all the ingredients together. You can add any veggie to the waffle mix you’d like. But I suggest you to dice them very small. Once you have the batter ready, pour the batter in the waffle maker. The batter will be thick - but that’s okay! Cook for 3-4 minutes. Or till it’s golden brown. Top with an egg. Highly suggested.
