Cauliflower Tabouli


1 cup of cauliflower rice

1 whole cucumber diced

½ lemon juiced

1 cup of diced tomatoes

¼ cup of olive oil

1 tsp of salt

½ tsp of pepper

2 tbsp of mint (chopped)

1 tbsp of parsley (chopped)

What to do

This is a raw meal, so you’ll be eating the cauliflower cold. I buy my cauliflower already riced, so I threw 2 cups of riced cauliflower in a bowl as is. If your veggies aren’t diced, go ahead and do that. When everything is diced (including the herbs), throw everything in a bowl. Make sure you mix well. Put it in the refrigerator for 30 minutes (or until it’s chilled). Simple and delish!
