Date Sweetened Brownies



Ingredients

Date sweetened brownies:

2 C of tightly packed medjool dates (I used @traderjoes)

1/4 C of warm water (I boiled mine to luke warm)

1/2 C of creamy almond butter or peanut butter

2 TBSP of melted coconut oil

1/4 TSP of pink salt

1/2 C of raw cacao

1/4 C of chocolate chips and / or walnuts


What to do

Preheat the oven to 350. Then unpit the dates (if they are pitted). If your dates are hard, boil them in water for 10 minutes (or till they have softened-don’t opt this step if the dates aren’t soft and gooey!). Drain the dates fully and throw them in your vitamix. Blend till you have a creamy texture. Once you have a creamy texture, add the 1/4 C of warm water. (I boiled some water in my tea kettle to Luke warm). Blend till you have a date paste texture. Then add the “melted” coconut oil, raw cacao, pink salt, and creamy nut butter of choice. Blend all the ingredients till you have a thick batter. If you’re adding the chocolate chips and walnuts- add it now and pulse one or two times. Pour the batter in a small pan (I used a 9 inch x 5 inch) on parchment paper. Even the batter with a spatula and then bake for 30 minutes. (Or till it has hardened) This will keep it soft and chewy. Take it out, and sprinkle more pink salt on top. Let it cool in the pan for 10 minutes. Then carefully lift the brownies out using the parchment paper. Let it sit for another 20 minutes on the counter. This will allow the brownies to firm. Once you’ve allowed it to sit for 30 minutes- cut & enjoy! Leave them in a tight container in the fridge or room temp.
