Date Sweetened Peanut Butter Cookies


These cookies are only sweetened with dates but they don’t taste like it! These are vegetarian and paleo friendly. These are full of protein and natural sugar. It’s great for a midday pick me up or a healthy dessert.

Peanut Butter Cookies: ⁣⁣⁣⁣

1 c of dates ⁣⁣⁣⁣

1 c of peanut butter ⁣⁣⁣⁣

1 pasture egg ⁣⁣⁣⁣

1-2 tsp of vanilla extract ⁣

Optional: chocolate chips or salt if your nut butter is unsalted ⁣⁣⁣⁣

What to do: Preheat the oven to 325. Then blend the dates & the nut butter in a high speed blender. (You may need to scrape down the dates, so it combines evenly) Then you’ll want to add the egg and vanilla. Line a pan with parchment paper. Roll the mixture into 1 tbsp balls, and press it down with a fork. Bake for 8-10 minutes. Do not over bake! Then let it cool for 15 minutes before eating. Keep refrigerated.
