Preheat the oven to 375. Then preheat a pan with olive oil. While the pan is preheating, dice the onions and the delicata squash into small pieces. Sauté till it’s golden brown. Meanwhile, add the 8 eggs, 1/4 c of cheese, and seasoning to a bowl. Mix till it’s fully combined. Then add the squash and the onions to the egg mix. Lightly oil an 8 inch pan, and throw the egg mix on the pan. Let it simmer for 5 minutes. Once it’s cooked for 5 minutes on the stove, add the remaining cheese and herbs on top. Bake for 15 minutes! Enjoy with a warm piece of bread on the side!
