Lentil Chili Stuffed Sweet Potato with Homemade Queso

Lentil chili Brown lentils Tomato sauce Salt, pepper, & cumin Lemon

What to do

Cook the lentils. Then add the tomato sauce, lemon juice, and seasonings. Heat on low for 10 minutes. That’s it, so easy! Vegan queso 1 C of raw cashews 1/2 jar of @traderjoes salsa verde 1 TBSP of @primalpalate taco seasoning 1 C of water What to do

If you want to soak the cashews over night, (It’s better for digestion) but you don’t have to! If you soak them, make sure to drain all the water before placing them in the blender. Then blend all the ingredients in a blender for a couple minutes or till it’s fully creamy. That simple!!!! (You can add more salsa & taco seasoning if you want a stronger flavor- it’s preference!) Enjoy hot or cold. I like mine warmed a bit.
