Paleo Almond Cup Cookies


1 cup of almond meal

3/4 cup of almond butter

⅓ or ½ cup of coconut sugar (depends on how sweet you want it)

½ tsp of baking soda

1 ½ tsp of vanilla

1 egg

Chocolate of choice

A pinch of salt

What to do

Preheat the oven to 350. Mix the egg, ¾ cups of the almond butter, coconut sugar, and 1 tsp of vanilla until it is fully smooth. In another bowl mix the almond meal, baking soda, and the pinch of salt. Then you will want to combine the wet and dry ingredients together. You're going to place the crust in cupcake liners. once you have evenly placed the crust in each one, make a hole in the middle of each cookie for the filling to go. Bake the crust for 8-10 minutes. While the cookies are baking, melt the chocolate of choice. Then fill ‘em with 1 TBSP of melted chocolate and enjoy!
