Ingredients 1 c of red lentil 1 yellow onion 1 can of chickpeas 2 tomatoes 2 carrots 2 celery 1 whole veggie stock 1/2 tsp of turmeric 1/2 tsp of cinnamon A generous amount of salt What to do
In a large pan, add some olive oil. While the pan is heating up, dice the onions. Sauté the onions for a good 8-10 minutes. Then dice celery, carrots, and tomatoes. Add the celery, carrots, and seasoning to the pan. Let that sauté for another couple minutes. Throw the tomatoes in there, and let it sauté for 2-3 minutes. Lastly, add the veggie stock and lentils. Bring the soup to a boil. Then let it simmer for 10-15 minutes. You’ll want the flavors the lentils to fully cook and the flavor to really come out. Once it has cooked for 10-15 minutes, add your chickpeas and favorite herbs.
