Bakery Style Sweet Potato Cookies

These are my top favorite cookie recipe I ever created. It is crispy on the outside and chewy on the inside. They are unreal. I'm talking bakery style unreal. This is definitely a must make cookie recipe.


1 egg

2 1/3 c of almond flour ⁣⁣⁣

1/4 c of almond butter ⁣⁣⁣(not peanut butter)

1/2 c of canned purée sweet potato ⁣⁣⁣

1/3 c + 2 tbsp of maple ⁣⁣⁣

1 c of chocolate chips ⁣⁣⁣

1 tsp of baking soda ⁣⁣⁣⁣

Salt to taste⁣ ⁣⁣⁣⁣ ⁣

What to do

Preheat the oven to 350. Take out two bowls. One for the dry ingredients, and the other for the wet ingredients. Mix them separately and then combine. Scoop the dough with a spoon and place it on parchment paper and then flatten each cookie out. They should be medium large sized cookies. Bake for 10-11 minutes. I like to undercook mine, so it’s nice and doughy! Don’t worry the egg will be fully cooked! Let the cookies cool for 10-15 minutes before eating. They will harden up after they cool down. ENJOY warm and hopefully you don’t eat the whole batch at once. ;) store in a closed container in the fridge.
