Vegan Cream Cheese

Oh, this stuff is good y’all. It’s so easy to make, and you will have enough that it will last you over a week. My dairy loving husband approved of this. That says a lot! Enjoy with a hot bagel, baked tomatoes, and fresh dill.

Vegan Cream Cheese:⁣

2 c of raw cashews (soaked)⁣

3 tsp of apple cider vinegar ⁣

3 tbsp of lemon juice⁣

2-3 tbsp of @traderjoes 21 salute⁣

1/4 c + 2 tbsp of filtered water ⁣

A generous amount of salt ⁣

Optional: fresh herbs ⁣

What to do: soak the raw cashews in warm water for an hour. The past 30 minutes I boiled mine. (Make sure you have more than enough water in the pan so you not to burn them) once the cashews are done, drain the water, and let the cashews cool down for 10 minutes. then add your liquids to your vitamix (Apple cider, lemon, water) + the rest of your ingredients. Blend till you get a creamy texture. Took me about 5 minutes with my vitamix. Scrape down if necessary. Cover in a closed container and then keep it refrigerated.
